  • Salt

  • Asafoetida (hing)

  • Optional: Roasted fenugreek

Preparation Steps:

  1. Slit the Chilies: Make a small slit in each green chili.

  2. Prepare the Marinade: Mix sour buttermilk with salt, asafoetida, and roasted fenugreek powder.

  3. Marinate the Chilies: Soak the slit chilies in the buttermilk mixture overnight.

  4. Sun-Dry: Drain the buttermilk and spread the chilies on a tray. Dry them under the sun for several hours over 3–4 days until they are completely dried and crisp.
